  • 1 cup chopped celery 2-3 celery stalks
  • 1 small onion, chopped
  • 3 tbsps all-purpose flour 
  • 1 tsp old bay seasoning
  • 1/2 teaspoon salt
  • 2 cups slightly warmed whole milk 

For serving

  • Fresh parsley
  • Hot sauce such as Tabasco
  • Soda crackers

2.2 Instructions

  • Drain the oysters in a colander over a bowl, then rinse them under cold water to remove any sand or shell fragments. Keep the brine oyster aside. Chop the oysters coarsely.
  • Place a paper towel over a mesh sieve and strain the retained oyster juice into a clean basin.
  • Heat a big saucepan over medium-high heat. Add bacon grease or butter. Add the potatoes, celery, and shallot after the fat has melted and heated.  Stirring for 2-3 minutes.
  • Reduce to medium heat and stir in the flour, old bay seasoning, and salt. Cook, stirring continually, for 1 minute, or until the flour is thoroughly browned.
  • Slowly drizzle in the saved oyster juice, swirling constantly and scraping the fond (brown pieces) off the bottom of the pan. Scrape out all of the brown particles. Then gently pour in the milk, stirring continually to ensure that everything is well combined.
  • Reduce the heat to low/simmer and let the soup cook up gently for about 10 minutes. Cook for another 2-3 minutes after adding the oysters.
  • Serve with fresh parsley, spicy sauce, and soda crackers right away.

    • Because we live far from the beach and fresh oysters are not easily accessible, I use preserved oysters. Freshly shucked oysters, on the other hand, are a must.
    • 1 tiny potato is required. This dish works well with russet or Yukon gold potatoes.
